- All- Purpose Flour: The flour contains around 12% of gluten. This is a good everyday flour, which is used to make delicious cakes, pastries and crusty breads. But normally is used at home as professional bakers use specific flours like cake flour, pastry flour, or bread flour for their baking purpose.
- Bread Flour: Bread flour is a very strong type of flour which has a very high percentage of gluten. The percentage is nearly 13 to 14 percent. The flour looks slightly off-white in its color. It is majorly used to make breads. Other than breads it is used for making pizza, rolls, dough, and other similar products. The weight of a cup of bread flour is around 140 gms.
- Cake Flour: It is made of soft wheat and contains lesser amount of gluten. You can find 7.5 to 9 percent gluten in it. It is lot finer than the bread flour and a lot whiter in color too. It is normally used to make pastries and cakes. The weight of a cup of cake flour is around 99 gms.
- Pastry Flour: The flour is stronger than cake flour with 9 to 10 percent of gluten. It is used to make biscuits, cookies, pie, muffins, etc.
- Self-Rising Flour:It is all-purpose flour which has baking powder and salt added to it.
